Bacon Wrapped Pork

Brine Ingredients:

4 c. water
1/4 c. salt
1/4 tsp. black pepper
1 sprig fresh sage
1/4 bay leaf
1/2 garlic clove, smashed
1 boneless pork loin

Roasting Ingredients:

1 garlic clove, chopped
1 tbsp. chopped fresh sage
8 John Morrell Maple Bacon slices


Brine Preparation:

Combine brine ingredients in saucepan and heat until salt is dissolved. Pour brine into pot and cool to room temperature. pork. Marinate, covered and chilled, at least 8 hours.

Roasting Preparation:

Preheat oven to 350 degrees. brine and place pork in roasting pan. Stir garlic, sage together and rub on pork. Lay bacon slices over pork loin and tuck ends underneath. Roast until pork is approximately 150 degrees, about 90 min. Remove from oven and let stand for 15 min.
