Maple Bacon Quiche

1 Pie Crust
4 strips John Morrell Maple Bacon
1/2 tbsp. EVOO
1/2 small onion, thinly sliced
1 large egg
1/2 c. heavy cream
1 tsp. fresh thyme leaves, chopped
1/4 tsp. coarse salt
Pinch of pepper


Line pie crust with parchment paper. Bake as directed. Turn oven to 375 degrees. Cook bacon as directed. Pour off drippings and reserve 1 tbsp. in skillet. Add oil to skillet and heat over medium heat. Add onion and cook 3-4 min., until translucent. Whisk eggs, cream, thyme, salt and pepper. Mix in onion. Pour into cooked pie shell. Distribute half the bacon on top. Bake until edges are set, about 15 min. Scatter the remaining bacon on top and bake until golden brown, approximately another 20 min. Serve warm.
