Smoked Sausage and Corn Chowder

4 tbsp. butter or margarine
2 tbsp. flour
1/2 c. onion, chopped
1 lb. John Morrell® Loop Smoked Sausage, cut into 1/4 in. slices
1/2 c. Mild Cheddar Cheese, grated
1 qt. milk
1 (16 oz.) can cream style corn
1 (10-1/2 oz.) can cream of potato soup, undiluted
1 tbsp. hot sauce
1 tbsp. Cajun seasoning
1/4 c. parsley, chopped


Melt butter, add flour; blend thoroughly then add onion and John Morrell® Loop Smoked Sausage. Sauté over medium heat for 5 min. Add next 5 ingredients (through Cajun seasoning), cover, and cook over low heat for 20 min. Stir occasionally. Just before serving, sprinkle with cheese and parsley.
